I made a recipe called Fantasy Fudge last night.
I am supposed to be “watching what I am eating”, but there I was, making fudge.
So, today, I am watching what I am eating and, oh look, it’s fudge.

I made it in the microwave and substituted chopped almonds for the walnuts, because I had chopped almonds and whole walnuts and was feeling just a tad bit lazy. I promise that the lack of walnuts will not be a deterrent to eating more than your share of the fudge. This recipe makes a whole 9×13″ pan of fudge, and I decided to freeze a bunch of it, gave some away to my neighbors, and there is still plenty left over. ENJOY!
